The wort moves to our gleaming copper kettles for a vigorous boil. This is where we add hops, the ingredient that gives beer its distinctive bitterness, flavor, and aroma.
Different hop varieties are added at precise intervals during the boil. Early additions contribute bitterness, while late additions preserve delicate aromas and flavors.
After cooling, the wort is transferred to fermentation vessels where yeast is added. This is where the magic truly happens. Yeast consumes the sugars, producing alcohol and carbon dioxide, transforming wort into beer.
Our temperature-controlled fermentation tanks ensure yeast works at its optimal rate, creating clean flavors and the perfect balance of characteristics for each beer style.
Patience is a virtue in brewing. After primary fermentation, our beers undergo conditioning, allowing flavors to mature and mellow. This secondary phase refines the beer's character.
During conditioning, unwanted compounds settle out, carbonation develops naturally, and the complex flavors we've worked so hard to create reach their full potential.
The final step is packaging our finished beer. Whether in kegs, cans, or bottles, we ensure each vessel is properly cleaned, filled, and sealed to preserve freshness.
